Winery St. Tomas – Malé Žernoseky

The winery is located in the picturesque area of the Central Bohemian Uplands in the region of Malé Žernoseky, on the slopes of Dobro and Opárenské valley. It has a family character.

The first vineyard was planted in 1984 by the founder of the winery, Z. Vybíral senior. On the threshold of the new millennium, new vineyards were planted and so was the company Zdeněk Vybíral - Vinařství Sv. Tomas.

The main cultivated varieties are Burgundy varieties, in particular:

  • Pinot Gris
  • Pinot Blanc
  • Pinot Noir
  • Muller Thurgau
  • Svatovavřinecké.

The company's goal is to produce high quality high end wines. The grapes are grown and processed with the greatest care, mostly by hand, using conventional technologies. In addition to traditional white wines, some of the blue grapes are processed by "white technology" to become Claret and Rose.

Wines made from local grapes are bouquet, with a pleasant acidity, they are produced in small batches, the fermentation takes place at optimal temperatures, which keeps the wine a large amount of aromatic and flavoring substances. The wine is matured in the historic cellars of Žernoseky, first in larger containers, then in bottles with a volume of 0.75 l. A small amount of wine is shipped out as young wine. The vineyards are located on the southeastern slopes of the foothills of the Central Bohemian Uplands. The slopes are planted with vines from 150 to 270 above sea level. The soils are mostly light, sandy. The bedrock is mainly porphyry and gneiss with a large amount of mica. The area is largely shielded from rain in comparison to the rest of the region.

Wine Cellar

The cellar farm uses the historic buildings of Phannschmidt's farm: a press shop and a cellar. The presshouse was built during the reconstruction of the cellar in 1739. It now serves both for the processing of grapes and for the production, maturation and storage of wine. Part of the cellar is used for wine tasting.

The cellar is dug in "easy to dig" hard clay - the future tufa. It has a 6-meter overburden. Thanks to this, it maintains a temperature of 10 ° C all year round. We use these properties in our own wine production technology. With suitable volumes of fermentation vessels, no additional equipment is needed to control the fermentation temperature. The capacity of the cellar is divided: 90% stainless steel tanks and 10% oak barrels.
